Pasta with Salmon

Ingredients

  • 1 or 2 fresh salmon fillets
  • Type of pasta according to your preference
  • 1 / 2 cebolla
  • Mushrooms
  • 1 small can of heavy cream or evaporated milk
  • Salt and pepper to taste

Preparation

The first thing we must do is place a pot full of water on the fire, add a little salt and let it boil. When it starts to boil, add the pasta and let it cook for the time indicated on the package.

Meanwhile, in another pot or in a pan, we begin to make the sauce, in this container we place the onion previously cut into small pieces.

When the onion has acquired a transparent appearance, add the mushrooms and let brown for a few minutes.

Later, we add the fresh salmon and as desired, it is cut into smaller pieces or shredded. When the salmon changes color (indicator that it is already cooked), we incorporate the milk cream.

Add salt and pepper to taste, letting the sauce cook for a few more minutes, over low heat and until it thickens. Filter the pasta to remove the water with which it was cooked and serve by pouring the sauce on top along with a little Parmesan cheese.

Salmon and mozzarella sandwich

Ingredients

  • 2 slices of sliced ​​bread
  • 1 beaten egg
  • 2 slices of smoked salmon
  • 2 slices of mozzarella cheese

Preparation

On a slice of bread we place the slices of mozzarella cheese and smoked salmon, we proceed to cover the preparation with the other slice of bread.

If you like, you can add lettuce, tomato or another ingredient of your choice, you can even spread the bread with butter or mayonnaise, it all depends on your tastes.

Cut the bread already prepared into two or four equal parts, pass each piece through beaten egg and fry the bread in a pan with a small amount of hot oil.

When the bread is golden brown, remove it from the pan and serve while still hot. This recipe works for both dinner and breakfast and is one of the simplest salmon recipes.

Grilled salmon skewers

Ingredients

  • 1 fresh salmon fillet
  • The juice of one lemon and one lime
  • 1/2 orange juice
  • Sugar
  • Soy sauce
  • 5 tablespoons of extra virgin olive oil
  • Salt and pepper to taste

Step by Step

The first thing we must do is cut the salmon into small square pieces of approximately two centimeters in diameter.

In a bowl, mix the pieces of salmon with the lemon, lime and orange juice. Add salt and pepper to taste and put the container in the fridge, leaving it there for a couple of hours.

After the time, we insert the pieces of salmon on a toothpick or skewer, alternated with thin slices of lemon. To the mixture of juices, add the olive oil, 1/2 teaspoon of soy sauce and integrate well.

If the maceration is very salty, a little sugar is added to rectify the flavor. Once the skewers are assembled, we place them on the griddle turning them every once in a while so that they cook completely until they are ready to serve.

Salmon Cake

Ingredients

  • 500g of fresh salmon
  • 200ml of liquid cream
  • 1 garlic clove
  • 200gr of prawns
  • 1 sachet of natural gelatin
  • 2 eggs
  • 3 tablespoons of extra virgin olive oil
  • Pepper and salt to taste

Preparation

We start by preparing the gelatin and then use it, if we have sheets of this product, we will put them to hydrate in cold water, these sheets can be obtained ready for sale.

In a frying pan with the hot olive oil, place the garlic clove chopped into small pieces until browned, when this happens add the salmon previously cut into small pieces.

We must make sure that the fish does not have bones or skin, in addition to the salmon, we add the peeled prawns to the pan and let cook for a few minutes.

In a container where it can be beaten or in the container of the blender, add the salmon, the eggs, the prawns, the cream, the salt, the pepper and the gelatin.

When everything is completely crushed, pour the mixture obtained into a cake mold, preferably silicone, if this is not possible, you can use any other mold but you must add parchment paper to prevent the mixture from sticking.

We finish by placing transparent kitchen paper to cover the mold and take the container to the refrigerator for approximately two hours.
