Ingredients (5 people)

  • 3 onions. You can use 2 for the knuckle and then 1 for roasting.
  • 3 carrots
  • 2 sprigs of rosemary.
  • 2 bay leaves.
  • 3 cloves.
  • 2 potatoes of approximately medium size for each person (or those that serve for the tray).
  • 2 sprigs of fresh thyme.
  • 5 garlic cloves.
  • Oregano (essential)
  • Pork knuckle. It could be with or without skin, you should calculate 1 or a half for each person because it has a lot of bone.
  • 60 ml of brandy.
  • 50 ml of white wine.
  • Olive oil.
  • Salt

Simple preparation of marinated knuckle in the oven

  • We will start by peeling one of the onions to cut them into thick strips. We must also do the same with the carrot while cutting it into wide circles.
  • For this preparation we will use the pressure cooker. We must apply a little oil and then place it over medium heat. When all the oil is applied, we must place the pork knuckles, we must exert pressure so that they are sealed everywhere.
  • Then, you have to remove the knuckles to put the vegetables in the pot with a pinch of salt, sauté them for approximately 5 minutes until you notice that they begin to brown little by little.
  • To the same pot, we will have to add the knuckle together with the rosemary and the bay leaf. The cloves, a little pepper and finally the salt. Add water until the knuckles are completely covered, then close the pot.

We will put everything in the oven to continue baking for about 25 more minutes, or until we observe that the knuckle is slightly golden.
